Our New Espresso Coffee from Honduras – Finca Las Brisas

Our latest espresso coffee comes from Honduras, produced by the COMSA Cooperative. It is cultivated by Pedro Antonio Martínez Rodríguez, together with his wife Elba Nohemy Rodríguez and their daughter Yadira, on their family farm "Las Brisas."

Pedro dries the coffee himself in five self-built "Secadoras" (drying huts). The process begins with 2–3 days of drying on nylon sheets (thick plastic tarps) to gently reduce moisture content and protect the delicate parchment layer. The beans are then moved to raised beds inside the Secadoras:

  • For the first 8 days, the coffee is turned 18–20 times a day.

  • From the 9th day onward, it is turned 12–15 times daily.

Each day's harvest is dried separately. Only after all days within a small lot are fully dried are the individual batches blended into a single microlot, ensuring traceability and quality.
